One of the easiest yet sophisticated dessert that you can make if you have good chocolate (which I do now J!!!!) is a chocolate mousse. Is a definite crowd pleaser and can be made ahead of time and also its eggless.. Not that I made it for a crowd, I simply was trying to satiate my chocolate craving on a Sunday afternoon J

250gms Bitter sweet Chocolate
40gms Powdered Sugar
½ teaspoon Vanilla Extract
1 teaspoon white rum
1 1/2 cup heavy cream (I used Amul fresh cream)
· In a large bowl, set over a saucepan of simmering water, melt the chocolate and butter and stir until smooth. Remove from the saucepan and switch off the heat.
· In a bowl, whip up the cream until it just holds stiff peaks.
· Fold the whipped cream into the chocolate mixture, add the rum & vanilla extract fold gently but thoroughly. Transfer to10 small glasses ramekins & place it in the refrigerator.
· Let the mousse set in the fridge for at least an hour before serving.
