This pasta is to be made when you are in an indulgent mood, it can actually shoot up your cholesterol through the roof if you had it too often but there is no harm in indulging once in a while J. A steaming hot bowl of this yummy pasta spells instant comfort food. The sauce creamy luscious is enhanced by the addition of smoked paprika and Cajun spice.
p.s: just to convince myself that I was eating healthy, I added mushrooms and broccoli J (its tastes good too)
250 gms Dried durum wheat penne pasta (I used waitrose pasta)
1 tbsp Olive oil
100 gms Mushrooms
1 Small bunch of Broccoli
1 tsp Chopped garlic
1 Small onion chopped
1 tsp Cajun Spice
1 tsp Smoked Paprika
2 tsp Butter
1 cup white wine
2 tsp Parmigiano Reggiano (shredded)
50ml Fresh cream
Salt to taste
· Boil the pasta as per the packet instructions.
· In a separate pan heat the olive oil over medium heat, add onions, garlic, mushrooms & broccoli. Stir fry until it’s slightly brown. Add the white wine and cook till the wine reduces to half.
· In the meantime heat the cream in a saucepan. When the cream is almost bubbling add smoked paprika, Cajun spice, salt shredded cheese and the butter, let it simmer for just about 2 minutes, then remove it from heat.
· Add the vegetable in reduced wine to the cream sauce. Mix it well and then add the pasta to this sauce. Serve garnished with a little more parmesan cheese with some warm garlic bread.
By the way this was our Lunch today followed by a slice of Orange & Cranberry Cake. J
