Orange & Cranberry Cake

This cake pairs the tartness of cranberries with the sweet summery citrus flavour of orange… Besides its wonderful flavour this cake is supremely moist and light as well, as the commonly used milk is replaced with orange juice. This cake is a wonderful accompaniment to your tea or coffee. Truly captures the falvours of the season J





Ingredients

2 Eggs
100gms Butter
250gms Powdered Sugar
1 tsp Orange Rind
1½  cup Orange Juice
100 gms Dried Cranberries (these are the only ones available here)
300gms All purpose flour  
1 tsp Baking Powder
½ tsp Baking Soda


Method:

·         Heat the oven to 300 degrees & grease the cake pan/tin. (I also placed butter paper on the bottom lid of the pan for ease of removing it later).
·         Sift together the flour, baking soda & baking powder and keep it aside.
·         In a mixing bowl beat the butter for about a minute. Add the powdered sugar and beat again till the mixture turns a little pale in colour (about 2-3mins). Add the eggs to the butter and sugar one by one beating for a minute each time.
·         Add the orange rind, cranberries and the orange juice. (The batter has a tendency to curdle when the orange juice is added. Having the eggs at room temperature and adding them gradually will help prevent this. But don't worry if it does curdle. Once you add the flour the batter will smooth out.)
Lastly add the sifted flour (mix the wet and dry ingredients together, fold it in gently with a rubber spatula till well combined. Pour into the cake tin and bake for 40 minutes at 180 degrees.




P.S: The inspiration for this cake comes from this bakery near our home called ‘Bread Talk’ that has cranberry muffins. I used to love their cranberry muffins which were exorbitantly priced...as usual :) I so wanted to try making them but could never get my hands at cranberries, so finally when I managed to find these elusive cranberries (although dried..they aren’t bad at all..in fact the flavour is concentrated) I made my favourite muffins with the twist of orange!! J
