As mentioned in my earlier post, this is an adaptation of one of my favourite sandwiches from 'Basilico'...makes for a yummy breakfast J
Yield: 2 sandwiches
1 6 inch square Focaccia Bread
Roasted Bell Peppers
Fresh Basil Leaves
1 tsp extra virgin olive oil
2 tsp Sour cream
50gms brie/camembert cheese
1. Slice the Focaccia bread diagonally and then cut from the centre horizontally.
2. Brush some olive oil on the bread and then spread ½ a tsp of sour cream on each slice
3. Place the roasted bell peppers on 2 slices, followed by torn basil leaves. Place the cheese over these and cover with the other slice
4. Warm it in the Oven for just a few seconds so that the cheese melts.
Serve it with French fries if you are in the indulging mood…tastes heavenly J
