Carrot Cupcakes with Cream Cheese Icing is my first recipe :)

About 3 months ago me and my husband went to Candies for lunch (its got great food n good music..must check it out if u are in/from mumbai :) ) and as usual while he is standing in the never ending long queue (well yes i know i said the food n music is great but placing your order and finding yourself a table can really work up one's appetite ;) ) i as usual move on the the desert counter which is on the other side, to feast my eyes and eventually my stomach ;) when i happen to see these adorable cupcakes wrapped in cute liners perched on  cute little white cupcake stands (btw i am quite sure cupcakes originated from some fairytale). Since there has been much hoopla about the carrot cupcakes with  cream cheese icing i decide to indulge on one of those first. The moistness and sweet spiciness of carrot cupcakes contrasted  by the creamy tang of a cream cheese icing made me want to get  back to my kitchen and bake them right then. So that's the first thing i do next day....and i am proud to say that these came out even better than the one's at Candies :)

Carrot Cupcakes with Cream Cheese Icing

Yield: 12 cupcakes


100gms butter at room temperature
180gms All purpose flour
150gms sugar (I used powdered sugar, u can use castor sugar if u like)
1 1/2cups (about 160gms) finely grated carrots
1/2 teaspoon grated nutmeg
1/2 teaspoon cinnamon powder
1 teaspoon baking powder
1/2 teaspoon baking soda/sodium bi carb
1 tablespoon milk
1 Egg

For cupcakes:

1) Preheat oven to 170 degrees
2) Cream the butter and sugar
3) Add the egg and mix for about a minute
4) Add the carrots and nutmeg and the milk
5) Sift in the the flour, baking powder, baking soda and cinnamon powder
6) Stir the mix just till its all combined with a rubber/silicon spatula
7) Spoon into cupcake moulds/tray (3/4 filled)
8) Bake at 180 degrees for about 20-22mins or until a skewer comes out clean

For the Icing:

4oz cream cheese
50 gms butter
150gms sifted confectioners sugar
1/2 teaspoon vanilla extract

Beat the cream cheese and butter together till creamy then gradually add the sugar n vanilla and beat till fluffy and smooth.

P.S : Pardon the icing on the picture above, that was the first ever icing venture of mine ;)
